How to Make Cocoa Powder in A Factory?

Step 1: Cocoa Bean Processing

The starting point for cocoa powder production is mature, dried cocoa beans. Upon arrival at the factory, the cocoa beans typically undergo a screening and cleaning process to remove stones, metal impurities, and damaged or moldy beans, ensuring the safety and consistency of the raw material.

Step 2: Shelling (Dehulling)

Cocoa beans have a hard and rough outer shell, making them unsuitable for direct processing. A shelling machine is used to separate the outer shell from the inner cocoa nibs. The shelled cocoa nibs are the core raw material for subsequent processing, while the cocoa shells can typically be used as animal feed or other by-products.

Step 3: Roasting

Roasting is a crucial step in determining the flavor of cocoa powder. Cocoa beans are heated in a roasting machine to the appropriate temperature and duration, which not only further reduces moisture content but also activates the unique aroma of cocoa, removes some of the bitterness, and improves the performance of subsequent grinding and oil extraction processes.

Step 4: Grinding into cocoa liquor

The roasted cocoa beans are fed into grinding equipment, where the particles are gradually refined under high shear and friction. Because cocoa beans contain a large amount of cocoa butter, a highly fluid cocoa liquor is formed during the grinding process.

Step 5: Oil extraction (pressing of cocoa butter)

Cocoa liquor enters a hydraulic or screw press and is separated into two parts under high pressure:

Cocoa butter: light yellow, with a rich aroma, and an important ingredient in chocolate and cosmetics.

Cocoa cake: the solid mass formed after pressing, with a significantly reduced fat content.

Step 6: Crushing and grinding into Cocoa Powder

The cooled cocoa mass is processed through crushing and fine grinding equipment, gradually transforming it into a fine powder. Depending on the application requirements, the fineness and uniformity of the cocoa powder can be controlled through sieving or classification equipment, ultimately yielding finished cocoa powder that meets food standards.

Step 7: Finished Product Packaging

After production is complete, the cocoa powder is weighed and packaged in a dust-free, hygienic environment to prevent moisture absorption and contamination.
